I made those mint brownies tonight and we looooooooove them. They are very similar to how I always make mint brownies, but I've always made the topping with chocolate and butter rather than cream. The ganache is much nicer. Not sure why I've never done it that way. The brownie is super good. I had to sub most of the unsweetened chocolate for semi-sweet and reduce the sugar because I only had enough cocoa for the equivalent of one square (we don't have baking chocolate here so I always use the 3T cocoa/1T oil sub). But really, this is super duper yummy. And I doubled it in a 9x13. Thanks for sharing!!
