Cucumber Salad

When Jed and I first started dating for the third time, we had Nance day and Jed day to do all our favorite things, and go through photo albums from the couple of years of each other's lives we'd missed, and make our favorite dinners. I made something... and this cucumber salad, only to find out later that Jed pretty much detests cucumbers. This is my brother-in-law's recipe, and it's yummy, but then I'm also the weirdo that likes cucumber with lemon juice and salt or cucumber with vinegar and salt. So maybe not so yummy to all of you. But with all of your green thumbs, you should have cucumbers growing out of your ears by now. Here's something you can do with them.

Cucumber Salad

Ingredients:

2-3 cucumbers

1 tbsp. sugar

1 tsp. salt

2 tbsp. vinegar

1 tbsp. oil

Directions:

Peel cucumbers and slice thin, but not so thin that they are flimsy. Mix other ingredients together and pour over cucumbers. Add more if needed.


It looks a bit like this when it is done.
