Sunshine Ice Cream Pie
a Pampered Chef Recipe
2 cups finely crushed creme-filled lemon sandwich cookies (about 14 cookies)
3 TBSP butter, melted
1 quart vanilla ice cream
1 cup coarsely chopped creme-filled lemon sandwich cookies (about 7 cookies)
1 quart orange sherbet
2 cups thawed Cool Whip
1 TBSP orange zest
Preheat oven to 350. Combine 2 cups of finely crushed cookies with butter; mix well. Press into bottom of spring form pan. Bake 10 minutes; cool completely. Place in freezer until ready to fill.
Scoop vanilla ice cream into crust and press to form an even layer. Sprinkle with coarsely chopped cookies. Scoop sherbet over 2nd cookie layer; press to form an even layer.
Spread half of Cool Whip over top of pie. Pipe a decorative border with remaining Cool Whip. Garnish pie as desired, with orange zest, etc. Freeze at least 30 minutes or until ready to serve.
Yield: 12 servings
* You can also vary the flavor... Oreos, mint chip ice cream, chocolate ice cream, ETC.
